Corn Muffins - cooking recipe
Ingredients

1 c. white cornmeal
1 c. all-purpose flour
1 tsp. salt
3 tsp. baking powder
2 Tbsp. sugar
2 eggs, lightly beaten
1 c. milk
3 Tbsp. butter, melted
Preparation

Preheat oven to 400\u00b0.
Grease muffin tins that are 1 1/2-inches in diameter. Sift the dry ingredients into a mixing bowl. Combine eggs, milk and melted butter.
Add to the dry ingredients.
Mix just until blended.
Do not overmix. Spoon into greased muffin tins, filling each tin completely full. Bake at 400\u00b0 for 20 minutes or until done.
