Eggplant Dressing - cooking recipe

Ingredients
    1 large eggplant
    1 small onion, chopped
    3 Tbsp. parsley, chopped
    1 can cream of mushroom soup
    salt and pepper to taste
    3/4 to 1 c. bread or cracker crumbs
    3 Tbsp. butter
Preparation
    Peel and cube eggplant. Boil for about 10 minutes; drain. Mix pulp, onion, parsley, soup, salt and pepper. Use enough bread crumbs to make stuffing consistency. Put in baking dish and cover with crumbs and dot with butter. Bake at 350\u00b0 for about 30 minutes.
