Irish Potato Candy - cooking recipe
Ingredients

2/3 c. cold mashed potatoes
4 c. powdered sugar
2 Tbsp. melted butter
1 tsp. vanilla
1/2 tsp. salt
4 c. coconut
cinnamon and powdered sugar
Preparation

Mix potatoes and sugar well.
Add butter, vanilla, salt and coconut (blend well).
Flatten on a dish; chill for 1 hour.
Roll 1/2-tablespoon balls, then roll in cinnamon and sugar.
Store in the refrigerator.
