Ming'S Cashew Chicken - cooking recipe

Ingredients
    1 1/2 chicken breasts
    1 tsp. cornstarch
    1 Tbsp. oil
    3/4 c. unsalted cashews
    1 tsp. salt
    3/4 c. bamboo shoots
    1 Tbsp. oil
    1/2 tsp. sugar
    3 Tbsp. oil
    1/2 c. sliced mushrooms
    2 tsp. cornstarch in 2 tsp. water
    1/2 c. chicken stock
    1 c. snow peas
    2 Tbsp. soy sauce
Preparation
    Bone and skin chicken.
    If necessary, slice wafer thin and cut into 1 1/2-inch squares.
    Mix in 1 tablespoon oil and 1 teaspoon cornstarch thoroughly.
    Saute nuts in 1 tablespoon oil until slightly brown.
    In hot pan, place 3 tablespoons oil and salt. Add chicken and saute on hot fire until meat is done.
    Add stock, mushrooms, shoots and peas.
    Cover and cook 1 minute before adding sugar, soy sauce and cornstarch mixed with water.
    Stir until thick.
    Pour in nuts.
    Mix slightly.
    Serve with rice.
