Potatoes Moussaka * - cooking recipe

Ingredients
    2 lb. red potatoes, thinly sliced (about 6 medium)
    3/4 tsp. salt
    1/2 c. margarine, divided
    1 large onion, chopped
    3 cloves garlic, minced
    1 small eggplant, peeled and cubed
    1 c. peeled, chopped tomato
    1/2 tsp. dried basil
    1/2 tsp. dried oregano
    1/2 tsp. ground cinnamon
    2 Tbsp. all-purpose flour
    2 c. milk
    1/2 c. grated Parmesan cheese
Preparation
    Layer potatoes in a 13 x 9 x 2-inch pan or baking dish. Sprinkle with salt.
    Set aside.
