Potato Salad - cooking recipe
Ingredients

6 medium potatoes
4 hard-boiled eggs
2 Tbsp. salad cube pickles
1/2 to 3/4 c. mayonnaise
1 tsp. salt
1/2 tsp. celery seed (optional)
1 Tbsp. pimento (optional)
1 small grated onion
pepper to taste (optional)
paprika (optional)
parsley (optional)
Preparation

Peel and cut potatoes into large cubes.
In a 3-quart saucepan, cover potatoes with water and salt.
Boil until tender, but firm, about 20 minutes.
While potatoes are cooking, peel eggs.
Finely dice 3 eggs into small pieces in medium mixing bowl. Add pickles, mayonnaise, salt and onion.
Mix well.
When potatoes are done, drain well and put back into saucepan.
Pour egg mixture over potatoes and toss lightly until coated well. (More mayonnaise may be needed.
If so , add now.)
Spoon into serving dish.
Garnish with 1 sliced egg, paprika and parsley, if desired.
Delicious served warm.
