Ingredients

2 c. sliced beets
1/3 c. sugar
2 Tbsp. cornstarch
1/2 c. vinegar
1/2 c. beet juice
2 Tbsp. butter
salt and pepper to taste
Preparation

Heat cooked beets in double boiler.
Mix sugar and cornstarch; add vinegar and juice.
Pour over beets; add butter.
Stir occasionally until mixture gets thick.
