Low-Fat Spinach-Stuffed Flounder - cooking recipe

Ingredients
    1 lb. flounder or 4 fillets
    1 (10 oz.) pkg. chopped spinach (frozen)
    1 medium onion, chopped
    1 Tbsp. margarine
    1/4 c. flavored breadcrumbs
    fresh lemon and parsley
Preparation
    Rinse flounder.
    Cook spinach until tender.
    Drain water well. Set aside.
    Saute onion in margarine.
    Mix into spinach.
    Add breadcrumbs.
    Lay fish flat; place spinach mixture in center.
    Roll sides under and place in baking pan.
    Bake at 350\u00b0 for approximately 15 minutes or until cooked through.
    Squeeze on fresh lemon and garnish with parsley before serving.
    Serves 4.
