Zucchini Bread - cooking recipe

Ingredients
    2 c. grated peeled zucchini
    3/4 c. vegetable oil
    3 c. flour
    1/2 tsp. baking powder
    1 tsp. baking soda
    2 c. sugar
    1 tsp. salt
    3 eggs
    3 tsp. vanilla
    3 tsp. cinnamon
    1/2 c. chopped walnuts
Preparation
    Beat eggs until light and foamy.
    Add oil, zucchini and vanilla and mix together.
    Mix together dry ingredients.
    Add to wet ingredients with wire whisk.
    Pour into 2 loaf pans, greased and floured (9 x 5 x 3-inch).
    Bake at 325\u00b0 for 1 hour or until toothpick comes out clean.
    Yields 2 loaves.
