Scalloped Eggplant And Onions - cooking recipe

Ingredients
    1 medium eggplant
    4 medium onions
    2 Tbsp. butter
    buttered crumbs
    salt and ground peppercorns
Preparation
    Peel eggplant.
    Cut into 3/4-inch cubes.
    Boil until tender and drain.
    Peel onions.
    Cut into 1/4-inch slices.
    Parboil 5 minutes.
    Drain well and saute in butter until tender, but not browned.
