Rice Salad With Alfalfa Sprouts - cooking recipe

Ingredients
    3 c. cooked rice
    1 c. snow peas
    1/2 c. shredded spinach (fresh)
    2 scallions, minced
    1 1/2 Tbsp. olive oil
    juice and pulp of 1 lemon
    1/2 tsp. dried basil
    1/2 tsp. oregano
    1 tsp. Dijon mustard
    2 c. alfalfa sprouts
Preparation
    In large bowl, combine rice, peas, scallions and spinach. In a small bowl, mix together oil, lemon juice and pulp, basil, oregano and mustard.
    Toss half of the dressing with the rice mixture, then arrange sprouts on top of rice and drizzle the remaining dressing over them.
    (Sprouts are hot, tossed with rice, because they tend to mat and tangle when mixed.)
    Serve at room temperature in individual salad bowls. Makes 4 servings.
