Ratatouille - cooking recipe

Ingredients
    1 1/2 c. peeled, diced eggplant
    1/2 c. thinly sliced onion
    1 clove minced garlic
    3 Tbsp. olive oil
    1 medium green pepper
    1 1/2 c. sliced zucchini
    1 (16 oz.) can stewed tomatoes
    1 tsp. salt
    1/4 tsp. Italian seasoning
    dash of pepper
Preparation
    Place eggplant, onion, garlic and oil in 2-quart casserole. Cook in microwave 5 minutes.
    Cut green pepper into 1/2-inch strips.
    Layer pepper and zucchini over eggplant mixture.
    Add seasonings to tomatoes.
    Cook in microwave on 8 to 10 minutes. Let stand 5 minutes before serving.
