Banana Nut Muffins - cooking recipe
Ingredients

3 very ripe bananas, mashed
1/4 c. vegetable oil
1 egg, lightly beaten
1 tsp. vanilla
1/4 c. sugar
1/4 tsp. cinnamon
1/4 c. chopped walnuts
2 c. buttermilk baking mix
Preparation

Heat oven to 400\u00b0.
Line 10 muffin tins with paper liners. In large mixing bowl, combine all ingredients but baking mix, stirring with a fork until just blended.
Stir in baking mix until just combined.
Don't overmix.
Spoon batter into prepared tins, filling 2/3 full.
Bake for 10 to 12 minutes or until a cake tester inserted in center comes out clean.
