Turkey Soup - Parmentier - cooking recipe

Ingredients
    1 large onion, minced
    3 c. sliced raw potatoes
    3 c. turkey broth
    1 box frozen peas and carrots
    2 Tbsp. butter
    1 1/2 c. each: light cream and milk
    1/8 tsp. each: crumbled sage and thyme leaves
    salt and pepper
    2 c. finely diced cooked turkey
    paprika, chopped parsley and croutons (over top)
Preparation
    Cook onion and potatoes in turkey broth about 20 minutes; add peas and carrots.
    Cook 10 minutes longer.
    Add butter, liquids, herbs and salt and pepper to taste.
    Add turkey and heat.
    Serve with a sprinkling of paprika and parsley and the croutons.
    Makes 4 servings.
