Apple Bread - cooking recipe

Ingredients
    2 c. sugar
    1 c. oil
    3 eggs
    3 c. all-purpose flour
    1 tsp. salt
    1 tsp. baking soda
    1 tsp. cinnamon
    2 tsp. vanilla
    2 c. chopped, peeled apples
Preparation
    Preheat oven to 350\u00b0.
    Spray 2 loaf pans with vegetable spray. Beat together sugar, oil and eggs.
    In a separate bowl stir together dry ingredients.
    Add dry mixture to batter and mix just until blended.
    Stir vanilla, apples and pecans into batter.
    Pour batter into prepared loaf pans.
    Bake 1 hour or until inserted knife comes out clean.
    Yields 2 loaves.
