Cajun Chicken - cooking recipe

Ingredients
    boned, skinned chicken
    smoked sausage
    1 can Ro-Tel tomatoes
    1 tsp. thyme, cayenne pepper, salt and sugar
    2 Tbsp. cornstarch
    1 1/2 c. chicken broth
    2 to 3 c. rice, cooked and chilled
    1 bay leaf
    1 or 2 fresh tomatoes, cut up
Preparation
    Brown chicken in skillet with oil.
    Add all but rice; bring to boil.
    Simmer 30 minutes.
    Before serving, add rice and heat through.
    Take out bay leaf and serve.
    Serves 8.
