Shish Kabobs("Souvlakia") - cooking recipe

Ingredients
    3 lb. boneless leg of lamb
    1 c. olive oil
    2 Tbsp. fresh lemon juice
    1 Tbsp. salt
    1 tsp. pepper
    2 tsp. oregano
    1 medium onion, quartered and separated
    3 bay leaves
    4 cloves garlic, chopped fine
    2 Tbsp. chopped parsley
    3 green peppers, quartered
    2 tomatoes, quartered
    12 slices of onion
Preparation
    Cut meat from boneless leg of lamb into small pieces, making about 18 pieces in all.
    Combine the salt, pepper, oregano, garlic, onion, bay leaves, lemon juice and oil and pour over the lamb.
    Mix well and allow to stand overnight in refrigerator.
