Zucchini Bread - cooking recipe
Ingredients

3 eggs
1 c. salad oil
2 c. sugar
2 c. zucchini, peeled and grated
1/2 tsp. each: vanilla, salt, cinnamon, nutmeg and baking soda
3 1/2 c. flour
2 c. raisins, cooked a few minutes and drained
1 c. nuts, chopped
2 c. 100% bran (round pellet type)
2 c. boiling water
1 1/4 c. butter
3 c. sugar
4 eggs, beaten
1 qt. buttermilk
4 c. All-Bran
5 c. flour
1 Tbsp. salt
5 tsp. baking soda
2 c. fruit
Preparation
-
Mix 100% bran and water and let stand for 1 minute.
Cream butter and sugar together and add to first mixture.
Mix all dry ingredients and add to wet mixture gradually.
