Hawaiian Rice And Beans - cooking recipe

Ingredients
    3 c. uncooked rice
    2 (size 303) cans red kidney beans or black-eyed peas
    1 medium-size coconut or 1 large pkg. shredded coconut
    1/4 tsp. Italian seasoning
    salt
    1 clove garlic, pressed
    2 stalks green onion, chopped
    1 qt. boiling water
Preparation
    Prepare fresh coconut milk or use prepared shredded coconut dropped into boiling water.
    Boil coconut-water mixture for 10 minutes.
    Strain through a large fine mesh strainer.
    Press to get out all the coconut milk.
    Throw away coconut thrash.
    Pour kidney beans into coconut juice and bring to a boil.
    Add garlic clove, salt and green onions.
    While boiling, pour in rice.
    Cover and cook over medium heat, stirring once or twice until thoroughly cooked.
