Feta Potatoes - cooking recipe

Ingredients
    1 1/2 lb. potatoes, peeled and grated
    1 c. crumbled feta cheese
    1 Tbsp. fresh thyme, chopped
    1/2 tsp. salt
    1/2 tsp. pepper
    3 Tbsp. butter, divided
    thyme spring for garnish
Preparation
    Combine potatoes, feta, thyme, salt and pepper. Melt 2 tablespoons butter in skillet over medium heat. Add potato mixture. Using pancake turner, press to form even later. Cook 10-12 minutes, or until golden. Reduce heat. Using large, flat plate, slide potato from skillet. Invert potato back into skillet and continue cooking other side 20 minutes, or until golden. Place on platter and garnish with thyme sprig.
