Delicious Potato Rolls - cooking recipe
Ingredients

1 cake or pkg. yeast
1 1/2 tsp. salt
2 c. lukewarm water or milk
1 c. mashed potatoes (I make instant according to the directions)
7 1/2 to 8 c. flour
2/3 c. shortening
2 eggs
2/3 c. sugar
Preparation

Crumble yeast and add 1/2 cup of the water.
Cream shortening and add sugar and salt.
Blend in potatoes and well beaten eggs, as well as the yeast.
Sift flour before measuring.
Add 1 cup of flour with the rest of the water.
Then work the rest of the flour in with spoon and hands (later); knead until smooth.
Let rise in a greased bowl until doubled in size.
Punch down, make into rolls and let rise until doubled in size in greased pan.
Or, cover tightly and store in refrigerator.
Then you may use it as needed. Makes about 4 dozen.
