Meat Or Chicken Stock - cooking recipe

Ingredients
    4 qts. water
    2 onions
    2 carrots
    2 stalks celery
    2 cloves garlic
    2 Tbsp. tomato paste
    1/2 c. sweet peppers
    1 bay leaf
    1 tsp. salt
    5 or 6 peppercorns
    1 tsp. thyme
    Sprig of parsley (or 1 tsp. dried)
    Spring of rosemary (or 1 tsp. dried)
    1/4 c. fresh basil (or 1 Tbsp. dried)
Preparation
    Put bones (or carcass) and water in stockpot and bring to boil; lower heat and simmer for 2 hours, skimming as necessary. Add remaining ingredients and cook for 2 more hours. If using cooked bones, add all ingredients at once, bring to boil, skim, then simmer for 2 hours. Strain, cool, cover and refrigerate.
