Grasshopper Dessert Squares - cooking recipe

Ingredients
    1 qt. vanilla ice cream
    2 c. Cool Whip
    21 fudge-mint cookies, finely crushed
    1 Tbsp. butter, melted
    1/4 tsp. peppermint extract
    5 drops green food color
    mint leaves (optional)
Preparation
    Preheat oven to 375\u00b0.
    Place ice cream in refrigerator for 20 minutes to soften.
    In small bowl, mix crushed cookies and melted butter; stir to completely coat cookies.
    Press cookies into bottom of 8 x 8 glass dish.
    Bake at 375\u00b0 for 8 minutes; cool completely and place in freezer.
