Smothered Tomatoes And Okra - cooking recipe

Ingredients
    2 lb. okra
    3 Tbsp. oil
    1 Tbsp. flour
    1 medium onion
    1 small bell pepper, chopped
    2 medium celery stalks, chopped
    5 tomatoes (fresh) or 1 large can tomatoes
    salt and pepper to taste
Preparation
    Wash
    okra;
    cut
    and
    fry
    in
    2
    tablespoons oil.
    In separate skillet make a medium dark roux with 1 tablespoon oil and 1 tablespoon flour.
    Add
    chopped
    onion,
    bell pepper and celery; let simmer until wilted.
    Add
    tomatoes
    and simmer 5 minutes. Add okra and season
    to
    taste with salt and pepper. Turn to medium heat and cook
    for
    30 minutes. Then let simmer for 15 minutes on low heat to let flavors blend together.
