Zucchini Bread - cooking recipe

Ingredients
    1 c. Wesson oil
    2 c. sugar
    3 eggs
    2 c. grated zucchini
    3 c. all-purpose flour
    3 tsp. cinnamon
    1 tsp. salt
    1 tsp. soda
    1/4 tsp. baking powder
    1/2 c. chopped nuts
    1/2 c. coconut
    1 c. raisins
    2 tsp. vanilla
Preparation
    Cream oil and sugar; add eggs one at a time and beat well after each addition.
    Add grated zucchini.
    Sift together 3 times the flour, cinnamon, salt, soda and baking powder.
    Add to egg mixture.
    Fold in chopped nuts, coconut, raisins and vanilla. Bake in 2 well-greased and floured loaf pans for 1 1/2 hours at 325\u00b0.
    Serves about 16.
