Easy Mint Patties - cooking recipe

Ingredients
    1/3 c. light corn syrup
1/4 c. butter or margarine, softened
    1 tsp. peppermint extract
    4 3/4 c. sifted powdered sugar (about 1 lb.)
1 or 2 drops desired food coloring
Preparation
In a mixing bowl, combine light corn syrup, softened butter or margarine and peppermint extract.
Add powdered sugar, about 1 cup at a time, stirring until well combined.
Stir desired food coloring into mixture.
(Or, divide mixture in half and stir a different food coloring into each portion.)
Shape candy mixture into 1-inch balls.
Place the balls 2 inches apart on a baking sheet lined with waxed paper.
Gently flatten each ball with the tines of a fork (or bottom glass, dipped frequently in confectioners sugar).
Let candy stand at room temperature about 3 hours or until dry.
    Store tightly covered in refrigerator.
    Makes about 56 patties.
