Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    1 c. oil
    1 1/2 c. sugar
    2 c. grated zucchini
    2 Tbsp. vanilla or almond extract
    3 c. flour
    1 tsp. cinnamon
    2 1/4 tsp. baking powder
    1/2 tsp. salt
    1/2 c. chopped nuts
Preparation
    Beat eggs until foamy.
    Add oil, sugar, zucchini and vanilla; mix well.
    In separate bowl, mix flour, cinnamon, baking powder and salt.
    Add to above mixture.
    Mix well, then add nuts.
    Makes 2 loaves.
    Bake at 325\u00b0 1 hour until done (toothpick comes out dry).
