Stir-Fried Green Beans With Walnuts - cooking recipe

Ingredients
    1 c. vegetable oil
    1/2 c. walnuts
    1 lb. green beans, trimmed and cut diagonally into 1/2-inch pieces
    1/4 tsp. red pepper flakes
    2 Tbsp. soy sauce combined with 1 tsp. sugar
Preparation
    In a wok, heat the oil over high heat to 375\u00b0 and in it fry the walnuts for 10 to 20 seconds or until they are golden. Transfer the walnuts with a slotted spoon to paper towels to drain and chop them coarse.
    Pour off all but 2 tablespoons of the oil; heat the remaining oil over high heat until it is hot, but not smoking, and in it stir-fry the beans and the red pepper flakes for 1 minute or until the beans are coated with the oil.
    Add 1/3 cup water and steam the beans, covered, over moderate heat for 2 to 3 minutes, or until they are just tender, but still crisp.
    Add the walnuts and the soy sauce mixture and stir-fry the mixture over high heat for 30 seconds to 1 minute, or until the beans and walnuts are coated well with the sauce.
    Season the mixture with salt and pepper and transfer it with a slotted spoon to a heated serving dish.
    Serves 4.
