Spiced Orange Pot Roast - cooking recipe

Ingredients
    1 (4 to 5 lb.) beef chuck roast
    1 Tbsp. shortening
    1/2 c. onion, finely chopped
    1 clove garlic, minced
    1 (8 oz.) can tomato sauce
    2 c. orange sections with juice
    2 Tbsp. sugar
    1 Tbsp. grated orange rind
    1 1/2 tsp. salt
    1/2 tsp. nutmeg
    1/2 tsp. cinnamon
    1/2 tsp. cloves
    dash of pepper
Preparation
    Brown meat slowly on both sides in shortening.
    Add onion and garlic.
    Cover and cook 20 minutes.
    Pour tomato sauce, orange sections, sugar and grated orange rind over meat.
    Sprinkle with salt, pepper and spices.
    Cover and cook slowly until meat is very tender, about 2 hours longer.
    Serves 6 to 8.
