Sweet And Sour Chicken - cooking recipe

Ingredients
    1 Tbsp. oil
    15 oz. skinless, boneless chicken breasts
    1 c. grated carrots
    1/2 c. red bell pepper strips
    1/2 c. green bell pepper strips
    2 cloves garlic, minced
    1 c. drained pineapple chunks (reserve 1/4 c. liquid)
    3 Tbsp. white vinegar
    2 Tbsp. soy sauce
    1 Tbsp. packed brown sugar
    1 Tbsp. cornstarch
    1 tsp. ginger
    2 c. cooked rice
Preparation
    Cut chicken into 1-inch cubes.
    In large skillet, heat oil; add chicken.
    Cook over medium-high heat, stirring occasionally until light brown, about 3 minutes.
    Add carrots, peppers and garlic.
    Cook, stirring frequently, about 2 minutes.
