Low-Fat Bran Muffins - cooking recipe
Ingredients

3 c. 100% Bran Flakes
3 c. skim milk
2 egg whites
2 Tbsp. vegetable oil
2 3/4 c. whole wheat flour
1 c. sugar
2 Tbsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 tsp. cinnamon
1/2 tsp. nutmeg
1 1/2 c. fruit or vegetable of choice (mashed bananas, grated apples, blueberries, grated zucchini, grated carrots, crushed pineapple)
Preparation

Combine bran flakes, milk, egg whites and oil; let stand for 5 minutes.
Add all other ingredients and stir by hand until well blended.
Spray muffin tins with nonstick cooking spray or use paper liners and fill tins 2/3 full of batter.
Bake in preheated 400\u00b0 oven for 15 to 20 minutes.
Approximately 150 calories per muffin and 2 grams of fat.
Makes 24 muffins.
