Becky'S Great Rice Dish - cooking recipe

Ingredients
    1 c. White, long grain rice
    1/3 c. Shallots, diced
    1 clove Garlic, diced
    1/8 c. Olive oil
    1 can Chicken broth
    1 c. Water
    1/4 bunch Parsley, chopped
    Salt & pepper to taste
    Juice of 1 lemon
    1 bunch Green onions, diced
Preparation
    Cook the shallots and garlic in the oil until soft, then add 1 cup rice. Cook for 1 minute or so until brown. Add the chicken broth, 1 cup of water, salt and pepper. Cook for 18-20 minutes with a lid on. Add parsley, green onions and lemon juice and stir before serving.
