Eggplant "Turkish Style" - cooking recipe

Ingredients
    1/2 c. salad oil
    1 clove garlic, peeled
    1/2 c. onion, sliced
    1/4 c. green pepper, diced
    1 medium size eggplant
    2 c. tomatoes
    1 tsp. salt
Preparation
    Peel and dice eggplant.
    Heat oil in heavy frypan and saute garlic 3 minutes.
    Remove garlic.
    Add onion, green pepper and eggplant and cook 3 minutes.
    Add tomatoes and salt.
    Cook slowly over low fire 20 minutes until eggplant is tender.
