Yam And Apple Casserole - cooking recipe

Ingredients
    4 lrg. Yams
    3 lrg. tart cooking apples
    2 c. warm apple juice
    2 TBSP. butter
    2 TBSP. cornstarch
    1 c. sugar
    2 tsp. lemon juice
Preparation
    Parboil (this means to put in cold water and bring to a boil, then boil for 2-3 minutes and then remove) the yams; pare and slice.
    Peel and slice the apples.
    Mix together the cornstarch, sugar and water.
    Then add the butter and lemon juice.
    Alternate layers of sliced yams and apples in a buttered casserole.
    Pour sauce over all.
    Bake 1 1/2 hours at 325- 350\u00b0.
    (Canned yams can be used.
    Parboil the apples briefly to shorten the cooking time.) Serves 6.
