Eggplant Casserole - cooking recipe

Ingredients
    1 eggplant
    1 onion, chopped
    1 can cream of mushroom soup
    1/2 c. cracker crumbs
    1 1/2 c. grated cheese
    salt and pepper to taste
Preparation
    Peel and cube eggplant.
    Cook with salt and onion in small amount of water until soft.
    Drain and reserve liquid.
    Layer and end with cheese.
    Pour reserved liquid on top.
    Bake at 350\u00b0 for 30 minutes.
