The No Name Restaurant'S Fish Chowder - cooking recipe

Ingredients
    1 medium onion, chopped
    3 Tbsp. butter
    3 lb. skinned cod
    6 c. water
    2 cans evaporated milk
    1 Tbsp. paprika
    salt and pepper
Preparation
    Cook finely chopped onion in butter over low heat until soft, but not brown. Cut fish into 1-inch pieces.
    Place cod and water in pot with onions.
    Bring to a boil.
    Reduce heat and simmer for 3 to 4 minutes until fish flakes easily.
    (Skim off any surface foam.)
    Stir in evaporated milk, paprika, salt and pepper to taste.
    Cook just until all ingredients are thoroughly heated.
