Ingredients

2 eggs
3 c. whipping cream
1 c. milk
1/2 c. sugar
1/4 c. light corn syrup
1 tsp. vanilla
1/4 tsp. salt
1/3 c. green creme de menthe
few drops green food coloring
2 oz. semi-sweet chocolate, shaved
Preparation

In a mixing bowl, beat eggs on high speed of electric mixer until light (about 4 minutes).
Add whipping cream, milk, sugar, light corn syrup, vanilla and salt.
Stir until sugar is dissolved.
Add creme de menthe and food coloring.
Stir until blended.
Pour in 1 gallon ice cream freezer and freeze.
Remove dasher.
Stir in chocolate.
Pack with additional salt and ice (1 part to 4 parts).
Let \"ripen\" 3 hours.
Makes 5 cups.
