Fried Rice - cooking recipe

Ingredients
    1/2 c. minced onion
    3 Tbsp. cooking oil
    6 c. cooked rice
    1/2 c. cooked ham, chicken, pork or shellfish
    1/4 c. water chestnuts or bamboo shoots
    mushrooms, sliced or chopped
    1 Tbsp. soy sauce
    2 eggs, slightly beaten
    salt and pepper
Preparation
    Cook onion in oil until it colors slightly.
    Add rice and cook, stirring, over low heat 2 to 3 minutes, then add meat and water chestnuts (slivered or chopped).
    Sliced or chopped mushrooms may be added with any of the ingredients or used alone. Mix well, then add soy sauce, eggs and seasonings to taste.
    Cook, stirring, over low heat until the eggs are cooked (this will take only 2 or 3 minutes).
    Trim with sliced green onions or more of same meat, slivered, that is used in the rice.
    Makes 6 main dish servings or more as a side dish.
