Southern Style Yellow Summer Squash - cooking recipe

Ingredients
    several yellow squash
    1/2 stick margarine or butter
    salt and pepper to taste
    bread crumbs, finely crumbled (optional)
Preparation
    In a large skillet, cut up squash (skin and all if young squash).
    Add margarine, salt and pepper and enough water to cover squash.
    Bring to a boil.
    Turn heat down and simmer for 1 1/2 to 2 hours.
    Keep mashing with a fork and add water as it cooks out. When squash is the consistency of mashed potatoes and the liquid is gone, cook slowly turning with spatula until the squash is a golden brown.
    Makes a small bowl full.
    Very good and worth the effort.
    Sprinkle with bread crumbs.
