Calamari Con Pomodoro - cooking recipe

Ingredients
    2 lb. squids
    4 Tbsp. olive oil
    pinch of oregano
    1 tsp. chopped parsley
    1 c. solid-pack tomatoes
    1/2 c. dry sherry (if desired)
    2 cloves garlic
    1 onion, minced
    salt and pepper to taste
Preparation
    Have squids thoroughly cleaned.
    Cut into small pieces.
    Wash well.
    Pour olive oil in saucepan and heat.
    Brown garlic and onion.
    Add squids.
    Cover; saute 10 minutes.
    Add salt, pepper, oregano and sherry; cook 10 minutes longer over low flame.
    Add tomatoes and parsley.
    Cover.
    Cook 15 minutes or until tender. Serve very hot with Italian bread.
