Spanish Rice With Chicken - cooking recipe

Ingredients
    2 1/2 to 3 lb. chicken, cut up
    2 tsp. salt
    1/4 tsp. pepper
    2 (16 oz.) cans stewed tomatoes
    1 c. water
    1 c. uncooked rice
    1/2 tsp. thyme
    1/4 tsp. red pepper
    1 clove garlic, crushed
Preparation
    Place chicken in large kettle.
    Sprinkle with salt and pepper. Pour stewed tomatoes and water on chicken.
    Heat to boil.
    Reduce heat; cover and simmer for 30 minutes.
    Stir in uncooked rice, thyme, red pepper and garlic.
    Heat to boil.
    Reduce heat and simmer 20 minutes more.
