Ingredients

3 c. cubed raw potatoes
2 eggs (use egg substitute)
1/4 c. flour
1 small onion, quartered
1 tsp. salt
1/4 tsp. baking powder
no-fat cooking spray
Preparation

Wash, peel and cut potatoes and pat dry with a paper towel. Put all ingredients, except cooking spray, into a blender.
Cover and press \"chop\" button for 10 seconds.
If needed, use a spatula to push potatoes down (not while motor is running!).
Pour the batter (1/4 cup per pancake) onto a hot griddle that has been sprayed.
Brown and turn once to brown second side.
