1/2 lb. ground pork or bulk sausage
2 Tbsp. onion, chopped
2 Tbsp. bell pepper, chopped
1 c. ham, diced
1 Tbsp. green onion, chopped
1/8 tsp. garlic, minced
2 (15 1/4 oz.) cans black-eyed peas with jalapenos, drained
2 c. rice, cooked
1/4 lb. margarine
bread crumbs
salt and pepper to taste
Preparation

Cook pork or bulk sausage, onion and bell pepper for 30 minutes on low heat.
Add ham, green onion and garlic; cook 30 minutes.
