Second Prize Baked Cod Fillets With Piquant Potato Crust - cooking recipe
Ingredients

2 slices bacon, chopped
1 Tbsp. vegetable oil
1 c. minced onions
10 oz. Russet potatoes, pared, cooked and shredded
1/2 tsp. salt
1/2 tsp. freshly ground black pepper
1/2 tsp. dried dill
4 to 5 oz. Alaskan cod fillets
2 tsp. Dijon mustard
pinch of paprika
Preparation

Mix oil, onions, potatoes, salt, pepper and dill.
Roll fillets in mix and place in pan.
Place chopped bacon, mustard and paprika in a small bowl and combine.
Spread on top of fillets. Bake.
