Eggplant - cooking recipe

Ingredients
    3 c. raw eggplant, diced about 1/2 size
    1/2 c. chopped onion
    1/4 c. chopped green pepper
    2 1/2 c. diced tomatoes
    3 Tbsp. butter or vegetable oil
    flavor to suit with garlic
Preparation
    Put onion and pepper in hot oil and brown slightly.
    Add eggplant and garlic; cook a few minutes.
    Add tomatoes.
    May also be baked for 30 minutes.
