Cheddar Corn - cooking recipe

Ingredients
    2 Tbsp. butter or margarine
    2 Tbsp. minced onion
    1 Tbsp. all-purpose flour
    1 (16 oz.) pkg. whole kernel corn (frozen or fresh cut)
    3/4 c. low-fat milk
    1/4 c. finely chopped red bell pepper (optional)
    1/2 tsp. each: salt and sugar
    1/8 tsp. pepper
    1 1/2 c. (6 oz.) shredded cheese
Preparation
    In a saucepan, melt butter over medium heat.
    Add onion.
    Cook 3 minutes, stirring occasionally.
    Stir in flour; cook 1 minute, stirring frequently.
    Add corn, milk, pepper, salt, sugar and pepper.
    Heat to a boil over high heat.
    Reduce heat to low and cook 5 minutes, stirring occasionally.
    Stir in Cheddar cheese just until melted.
    Garnish with parsley and serve.
