Chicken Fruit Salad - cooking recipe

Ingredients
    6 chicken breast halves, skinned
    1 1/2 c. water
    1 (15 oz.) can unsweetened pineapple chunks (undrained)
    1 medium apple (unpeeled)
    1 c. seedless grapes, halved
    1 1/2 c. mayonnaise (reduced calorie)
    lettuce leaves
Preparation
    Place chicken and water in oven; cover and cook 15 to 20 minutes or until tender.
    Drain and remove chicken from bone. Coarsely chop and set aside.
    Drain pineapple and reserve juice. Coarsely chop apple.
    Dip in pineapple juice to prevent discoloring.
    Combine chicken, pineapple, apple, grapes and mayonnaise; mix well.
    Cover and chill 2 hours.
    Serve on lettuce leaves.
    Serves 6.
