Country Fried Potatoes - cooking recipe

Ingredients
    4 or 5 potatoes, sliced
    1/2 c. shortening or oil
    1 c. sliced onions
    2 tsp. salt
    1/4 tsp. black pepper
Preparation
    Heat shortening or oil in heavy skillet over low heat.
    Arrange a layer of sliced potatoes and sliced onions; repeat.
    Sprinkle with salt and pepper.
    Cover tightly.
    Cook over low heat for 15 minutes.
    Uncover and increase heat slightly; saute for 10 minutes longer or until potatoes are crisp and brown on underside.
    Do not stir.
    Fold in half as with an omelet.
    Serve on a hot platter.
