Ingredients

1 c. ground cured ham
1 c. cooked mashed sweet potatoes
1 egg, slightly beaten
1 Tbsp. water
Dry bread crumbs
Fat for frying

Preparation

Combine ham and sweet potatoes. Shape into croquettes. Dip into the beaten egg, which has been mixed with the water. Roll in crumbs. Fry in shallow or deep fat or bake until brown in a 400\u00b0 oven.
