Scalloped Eggplant - cooking recipe

Ingredients
    1 medium sized eggplant
    1/2 c. sliced onions
    3/4 c. mushrooms
    4 Tbsp. butter
    2 c. milk
    cracker crumbs
Preparation
    Peel and dice eggplant and cook in boiling water for 15 minutes.
    Cook onions and mushrooms in butter.
    Blend in 4 tablespoons flour and cook for 1 minute.
    Stir in milk and cook until thickened.
    Add eggplant, slightly drained.
    Season with salt and pepper.
    Top with cracker crumbs and dot with butter. Bake for 30 minutes in 350\u00b0 oven.
